Taco Beef Soup

One of our staples in the winter months. We like to pair it with Trader Joes Cornbread.

Taco Beef Soup
1 lb Ground beef (I use ground turkey)
1/2 chopped onion (or 1/2 T onion powder)
1 (28 oz) can tomatoes (undrained)
2 (16 oz) cans kidney and/or black beans (undrained)
1 (17 oz) can corn (undrained)
2 (8 oz) cans tomato sauce
1 pkg (2 T) Taco Seasoning mix

In a large pot, brown beef and onion. Drain off excess fat. Add rest of soup ingredients. Simmer covered for 15 minutes. Top each bowl with favorite toppings. Ex: cheese, chips, sour cream, avocados, corn bread.

Serves 6-8 people

  1. I do mine a little differently... I put in 2 cans of kidney beans, one can of pinto beans, omit the tomato sauce, and add a small can of chopped black olives. This makes for a thicker soup to eat with Tosditos Scoops (or other tortilla chip).

I'll have to try this one though!
